  • 600 g sliced pork (butcher)
  • 1 bunch of green asparagus
  • 4 young onions
  • 1 red pepper
  • 2 nectarines
  • 1 coriander plant
  • 1 red onion
  • 250 g basmati rice
  • 5 tablespoon olive oil
  • black pepper (mill)
  • salt

Preparation

Cut the nectarines in dice of ± 2 cm. Remove the hard ends of the green asparagus and cut the rest into sections of ± 4 cm. Roughly chop coriander leaves and young onions. Chop the red onion. Remove the chilli seeds and chop it finely.
1 Heat 1 tbsp. olive oil in a saucepan and sauté red onion and chilli until tender. Add the rice and 5 dl of water, then bring to a boil. Turn the heat down and continue cooking for 10 minutes covered.
2 In the meantime, dip the green asparagus for 5 minutes in slightly salted boiling water. Drain and rinse under cold water.
3 Heat 2 tbsp. olive oil in a skillet. Salt and pepper pork slices on both sides and cook for about 6 minutes on each side until golden brown.
4 Heat 2 tbsp. olive oil in a frying pan and brown the green asparagus and nectarines on all sides. Top with chopped coriander and young onions.
