  • 300 g halloumi (Cypriot cheese)

1 Grate the zest of the lemon and tear the basil leaves. Seed the chilli, then chop it.
2 Cut the halloumi into 1 cm thick slices and mix with 3 tbsp. olive oil, basil, lemon peel and chopped pepper. Pepper and reserve 20 minutes in the refrigerator.
3 In the meantime, cut the tomatoes in half widthwise. Slice the olives and garlic, and chop the oregano leaves coarsely. Divide the olives, oregano and garlic on the demitomates, salt and pepper. Water 1 tsp. tablespoon of olive oil.
BBQ cooking
4 Sponge the slices of halloumi with paper towels and reserve the marinade. Grill on both sides on a moderate barbecue until nicely zebra. In the meantime, heat the tomatoes, cut side up, on the sides of the barbecue.
6 Present the salad and slices of halloumi on the plates. Garnish with half tomatoes. Sprinkle with marinade.
