Cooking preparation (defrosting + 30 min)
1 Superficially thaw the fish and sponge it.
2 Cut sliced tomato, sliced mushrooms and unpeeled zucchini into cubes.
3 Remove the chervil and cut the lemon into 8 slices.
4 Chop garlic and shallots.
5 Place 4 pieces of baking paper on 4 sheets of aluminum foil. Arrange 1 fillet of redfish on each, and salt and pepper generously. Spread the slices of mushrooms, shallots, garlic and diced zucchini around the fish. Add 2 slices of lemon, a few slices of tomato and chervil on the fish. Fold the edges of the papillote and wet with the white wine. Lightly salt and pepper.
7 Close the foil well so that the steam can cook the food optimally. Also fold the aluminum foil around the baking paper.
