Cut unpeeled cucumber in half lengthwise. Scrape the seeds with a spoon, then cut it roughly. Cut the leek whites in half lengthwise, then in large chunks. Peel the potatoes and cut them into cubes. Crumble the feta. Roughly chop the mint leaves.
1 Melt the butter in a saucepan and cook the leeks for 5 minutes.
2 Add cucumber pieces and diced potatoes, and wet with broth. Cover and cook for 25 minutes over low heat.
3 Mix soup and season with salt and black pepper.
