Preparation

Cut the onion into pieces. Peel sweet potatoes and parsnips and cut into pieces. Take thyme. Crust the bread and cut it into cubes.
1 Heat 1 tbsp. olive oil in large saucepan and sauté onion, parsnips and sweet potatoes ± 5 min. Wet with the chicken broth and cook for 20 minutes over high heat.
2 Meanwhile, heat 2 tbsp. olive oil in a nonstick skillet and fry the diced breadcrumbs until crisp. Sprinkle with half the thyme leaves and mix well.
3 Mix the soup. Salt, pepper and add the maple syrup.
