  • 200 g of natural bacon matches (fresh space)

  • 2 leeks

  • 1 red pepper
  • 4 onions
  • 4 pieces of garlic
  • 4 tablespoon tomato paste
  • 4 dl dry white wine
  • 2 tablespoon olive oil

Cut the leeks into slices and the onions into half-moons. Chop garlic. Chop the parsley.
1 Heat the olive oil in a large skillet and let the chopped onions, garlic and pepper come back briefly. Add the leeks and continue cooking for a few minutes.
2 In a nostick, nofat frying pan, brown the bacon bits for about 4 min.
3 Add bacon bacon and tomato paste to the vegetables. Pepper and sprinkle with white wine.
4 Divide the mussels in 2 large saucepans. Add the pan fried vegetables and bring to a boil over high heat. Sprinkle with chopped parsley and cook for 5 to 7 min. The mussels are cooked when they are all fully opened.
