  • 1 lemon (only the juice)
  • 250 g mascarpone
  • 1 egg
  • 1 dl milk
  • 1 teaspoon. butter
  • salt and pepper

1 Cut the leek whites into slices of ± 1/2 cm. Melt the butter in a large saucepan and let the leeks wash for 5 minutes, covered over low heat. Salt and pepper.
2 Put frozen salmon steaks on leeks. Salt, pepper and garnish with lemon juice. Cook for 15 minutes over low heat and covered. In the meantime, beat the mascarpone with egg and milk until smooth.
4 Remove the salmon steaks from the pan and add 3/4 of the mascarpone mixture to the leeks. Mix well and warm up a few moments.
5 Transfer the leeks to a large deep oven dish. Place salmon steaks on top and top with remaining mascarpone mixture. Lightly brown under the grill.
