  • 600 g Greenland halibut fillet (frozen)
  • 2 leeks
  • 2 red peppers
  • 0.25 lemon (only the juice)
  • 2 sprigs of flat parsley
  • 2 dl of milk
  • 100 g of mascarpone
  • 2 tablespoon butter
  • 0.5 dl dry white wine
  • 0.5 fish stock cube
  • 1 tablespoon dried basil
  • 0.5 tablespoon dried thyme
  • 2 bay leaves
  • nutmeg
  • salt and pepper

Remove the seeds and white filaments from the peppers, and cut the flesh into small cubes. Chop the flat parsley.
1 Bring the milk to a boil in a large saucepan with 2 dl of water, half a cube of fish broth, thyme, bay leaf, salt and pepper.
2 Place halibut fillets where possible next to each other (if they overlap, swap them while cooking). Cover, bring just below boiling point on low heat and cook for 2 minutes. Remove the pan from the heat and the cooking will end spontaneously for 5 to 10 minutes. In the meantime, melt the butter in a saucepan (without letting it get colored). Add the slices of leeks and diced peppers. Mix and spice with salt, pepper and nutmeg. Wet with the white wine and let it stand for 5 minutes, covered.
4 Add mascarpone, lemon juice, basil and 2 tbsp. tablespoon of fish cooking juices. Reduce slightly.
