Phenomenally thaw pheasant fillets and sponge them out. Wrap each fillet in 1 slice of bacon and fix it with a cocktail stick.
1 Melt the butter in a pan and cook the pheasant fillets for about 2 minutes on each side. Remove from pan and add lemon juice, light cream and mustard.
2 Mix well and season with rosemary, juniper berries and pepper.
3 Put the pheasant fillets back in the sauce, cover and cook for 6 minutes on low heat.
4 Reserve the poultry out of the pan and reduce the sauce over high heat to the desired consistency.
