Ingredients:

  • 4 chicken fillets with thyme and lemon
  • 1 cucumber
  • 2 limes
  • 1 pomegranate
  • 0.5 bunch of young onions
  • 0.2 fresh dill plant
  • 100 g feta (block)
  • 250 g long grain rice
  • 50 g almonds
  • 4 tablespoon olive oil
  • 1 pinch of cane sugar

Preparation

Cooking preparation (35 min)
1. Cook the rice in slightly salted boiling water (see cooking time on the package). Drain.
2. Coarsely chop the almonds
3. Cut the unpeeled cucumber in 4 lengthways, then slice it. Also slice young onions and dill.
4. Crumble the feta.
5. Cut the pomegranate into 2 and extract the seeds.
6. Squeeze the limes after grating the zests. Pour the juice and zest into a bowl, salt and pepper. Add olive oil and cane sugar and mix everything together.
7. Mix rice with lime dressing, pomegranate seeds, cucumber pieces, almonds, feta, young onions and dill.
Coffee barbecue (± 20 min)
8. Cook the marinated chicken fillets for about 20 minutes on a hot barbecue.
