  • 1 shallot
  • 1 garlic burst
  • 5 cumin seeds
  • 2 tomatoes
  • 12 scallop (frozen)
  • 2 tablespoon durum wheat semolina
  • 1 sprig of fresh parsley
  • salt and pepper

Preparation

1. Heat 1 tbsp. olive oil in a saucepan and sauté 1 shallot in slices and 1 slice garlic minced until translucent. Add 5 minced cumin seeds and 2 tomatoes peeled, seeded and diced. Simmer for 5 minutes
2. Add 12 frozen scallop and 2 tbsp. wheat semolina (couscous). Prolong cooking for 5 minutes. Add salt and pepper. Divide the mixture into minitajines and sprinkle with 1 chopped parsley sprig.
